Now that my little one clearly communicates how much she adores having pasta, I felt an urgent need to make it super nutritious for her. The experimentation led to this- an easy yet super healthy spinach recipe for kids- Rich Spinach Pasta! Very often, I, as a mummy face countless rejections for my meals. Sometimes Pihu becomes extremely picky and though I shouldn’t tag her as ‘picky’ but I fail to understand why is she rejecting meals when she is happy to gorge on fruits or soaked nuts. But what I do understand is that she knows her hunger best. I cannot decode it but only follow it with the little cues she leaves behind. My Rich Spinach Pasta helps me in my pursuit. It is completely dairy-free, loaded with healthy fats and rich sources of iron. It should put any toddler in the best of moods. It’s perfect as first foods or to offer as finger food as well.
RICH SPINACH PASTA
- A bowl of pasta, (any of your choice, but go for wholewheat ones or other healthier options)
- A handful of Spinach leaves (rinsed well)
- A couple of Garlic pieces
- Pumpkin seeds, Sesame seeds, and Flaxseeds (these are our power ingredients which contribute majorly in making this pasta dish ‘healthy’ perse, but can be skipped if you don’t have.)
- A medium-sized white onion
- Green chilly (Half is sufficient if your little one is not fond of chilly)
- Soaked nuts (again just power ingredients, very good for providing rich fats that are very essential for growth and development) They can be any, really. 4 to 5 will be sufficient.
- Salt, oregano, and pizza pasta sauce (storebought or homemade, any!)
Step 1: Boil the pasta
Its a pasta dish so you need to boil prep your pasta. As you can see I have used macaroni Pasta but you can use any of your choice. Just add a few drops of oil and salt as per taste in the boiling water before throwing in your pasta. It should become soft say in 7 to 8 minutes. While it simmers you can proceed to blanch the spinach.
Step 2: Blanch the spinach
Blanching the Spinach is a very important and should not be skipped by any means. All you have to do is bring a bowl of water to boil and throw in the spinach leaves. Let them boil for a minute or two max to max. Immediately sieve the leaves and put them in an iced bowl of water as shown in the picture. The ice water shock will stop the cooking process of the leaves so as to not lose out on any nutritional value.
Step 3: Prepare the Pasta Sauce (Part 1)
Since this recipe requires almost nil cooking time for Pasta sauce (which means you have to just saute the sauce for a few seconds before adding the boiled pasta to it), it becomes very necessary to prepare the Spinach Sauce beforehand.
Add half tbsp white sesame, pumpkin seeds and flaxseeds along with a piece of green chilly and garlic bits. If you like an earthy taste then quick roast the seeds. You could also add roasted nuts along with the seeds for higher nutrition tapping.
Top it with the blanched Spinach and run the grinder.
The consistency of the sauce should be grainy and dense so that it sticky well to the pasta. The more it shall be there on the pasta the higher the chances of little one consuming the healthiness.
Step 4: Prepare the Pasta Sauce (Part 2)
Take a pasta pan or a wok and heat two tbsp sesame oil or any vegetable oil of choice. Stir fry chopped onions till translucent. Add a tbsp of pizza pasta sauce and let it cook for another minute. Once done add in the spinach mixture carefully. .
Step 5: Check salt and add in loads of Oregano powder!
I believe the dish just comes together once the Oregano is added. But be careful to not make it salty. Remember the Pasta already has been boiled in salty water.
Step 6: Mix the Pasta and serve hot!
Stir carefully now!
